There are hundreds of varieties of legumes, with a corresponding range of tastes and nutritional qualities. Beans are adaptable to a huge variety of delicious vegetarian dishes.

The bean report is mostly unscientific, and sometimes irreverent, but the information is based on years of knowledge and practice as a vegetarian. I'm happy to share what I know, because I have the feeling that the beans/gas issue keeps quite a few people from a vegetarian diet.
