When I was going vegetarian, long ago, the embarrassing subject of beans and gas was never discussed or dealt with. We suffered in silence - or not!

I had my fair share of gas as a new vegetarian, and it took me many years to figure out how to cook and eat beans without gas. But persevering with beans was worth it.

The badly misunderstood bean is a major source of high quality, inexpensive vegetarian protein. Beans and lentils have been a staple of the human diet for thousands of years.

There are hundreds of kinds of beans and lentils, in a wide range of colors, shapes, sizes, textures and tastes, eaten in an almost infinite number of delicious vegetarian dishes.

I've heard plenty of bean cooking tips that didn't work. I've seen bits and pieces on the subject of beans & gas. But nothing to really grab onto.

I came up with the bean report from those bits of information and misinformation, my own vegetarian experiments, other vegetarian cooks, and borrowed from Ayurveda.

The beans|gas problem is a hot topic on Savvy Veg, and I've heard from many people about it over the years. How To Eat Beans Without Gas was one of the first vegetarian advice letters I published. My answer was a short essay, which grew into this report.

Gas continues to be an obstacle to eating beans for new vegetarians and vegans. It's still embarrassing, and people still suffer in silence (or not).
